Spicen things up in the kitchen!


Have you ever felt as if you were making the same meal over and over and over again? That is how I have been feeling lately.
I think I need to spice things up in the kitchen! No, not that kind of spicen up.

What I mean, is I need some good easy and fast recipes for my family! If anyone wants to share one or two recipes with me I would be so so so grateful and so would my family.

Here's a yummy recipe my friend just gave me and out family loves to serve with good salsa and rice.
Chicken Enchiladas

1 large onion
1 T. minced garlic
2 T. olive oil
Salt and Pepper
1 small can diced green chilies
3 1/2 cups cooked chicken, cut into small pieces
1 (8oz) pkg. cream cheese
2 cups grated Monterrey Jack cheese (whatever cheese you want to uses works
1 1/2 cups whipping cream
Flour or corn tortillas (about 12 if using flour and more if using corn - I just fill them up until I run out of chicken mixture)

1. Slice onion into small pieces and saute in a large pan with the olive oil and garlic until onion is soft.
2. Add green chilies and cream cheese and cook over low until cheese is melted.
3. Add chopped chicken.
4. Spoon about 1/4 cup of mixture onto the middle of each tortilla, roll, and place seam side down in a large glass baking dish. Continue until all the mixture is used.
5. Cover the enchiladas with the cheese. and drizzle the whipping cream over the entire pan.
6. Back at 350 degrees for 40-45 minutes.

I have been very happily married to my "kindergarten sweetheart" for 20 years............well we actually didn't start dating until we were in our 20's...... Together we have 6 wonderful children. They are 17, 16, 15, 14, 10 and 8. Although, we have moved around often, I am hopeful that we are now settled back home in Michigan.
